Preheat the oven to 350°F. Grease and flour a muffin tin. 2. Grind the poppy seeds in a blender or coffee grinder. 3. In a saucepan, combine the poppy seeds and coconut milk and bring to a boil. Remove from heat, whisk in the egg replacer until fully incorporated, then set aside. 4. In a large mixing bowl, using an electric mixer, beat the palm shortening, coconut oil, sugar, and maple syrup on high until fluffy. Then, one at a time, add the vanilla, the poppy seed–coconut milk mixture, yogurt, applesauce, and lemon juice, stirring to fully incorporate each ingredient before adding the next.
